DIY Dulce De Leche (Milk Caramel)

I can’t seem to get enough of food these days. Lately I’ve been spending most of my free time scouting the web for recipes to try my hands on. Like I always say, I you’re going to eat everyday, you might as well make it interesting.


Anyways, this time around, I got tired of searching for the perfect recipe and jumped right into making this delicious Dulce De Leche….also known as milk caramel.



Want to make yours? Here’s what I did:



  • Butter – 125g
  • Evaporated milk – 345g (that’s 3 115g cans)
  • Whipping cream – 500g
  • Granulated sugar – 3cups
  • Vanilla – I tablespoon
  • Pinch of salt



  1. Pour the milk, cream and sugar into a pot on medium heat and stir continuously with a wooden spoon for about 30mins until the mixture thickens and turns brown
  2. Stir in the butter and pinch of salt. Continue stirring for about 15 mins.
  3. Take the pot off the heat and stir in the vanilla.
  4. Allow to cool and enjoy





  1. You have to mind the pot and keep stirring. Do not leave it unattended or it will burn
  2. Keep stirring for longer if you want a thicker consistency. I wanted mine to be a bit runny.
  3. I do not claim the idea as mine but decided to wing it after seeing so many variations. And it turned out so good ๐Ÿ™‚

Christmas is just around the corner….oh well, almost. As is my usual tradition, I go card shopping so I can share, in words, the joy and cheer of the season with the very many people in my life. Which means I have to buy very many cards; you know those that are sold in packs of 12 or 24. Well the problem with those kind of cards is that there are only 2 or 4 designs in a pack which means that at least 4 people in my office will get the same kind of card.ย  Kind of cold, isn’t it? Totally uncool. Wait, aren’t they opposites, cold and uncool? Oh sorry, I digress. Anyways for added warmth and that personal touch, I have to write in each and every one of about 50 – 70 cards. What? Phew!!! But its work that’s gotta be done.


While my illustration is a bit extreme, don’t you just hate the fact that the cards you buy for that special someone are just mass produced and very often, doesn’t capture the essence of the message you are trying to relay? Wouldn’t it be more fulfilling to give a card that says exactly how you feel? In addition to a gift of course; before you’ll do ‘alaroro’ and say I advised you to only give cards.

No. I’m not being paid to advertize the service; so why am I doing this? I love technology and I love solutions. Even more, I love when technology has an affair with solution and they give birth to a bouncing baby idea. Especially an idea so simple and novel, you become jealous; jealous that you didn’t think about it first. And yes, I am jealous….sobs!


Moral of the story? While technology in Nigeria is currently in it infancy stage, it is fast learning to crawl and we need to be right there when it goes boom. It doesn’t matter who you are or where you’ve been, there’s still an opportunity for us to be part of the digital age. As long as there are problems, there are opportunities and using technology as part of your solutions will lead to sometimes simple, yet mind-boggling innovations.

Day 7 #7daysofgratitude



1.ย  I am thankful for life. 6 days ago when I started this challenge, I naturally assumed I was going to see day 7. But this is a gift not to be taken for granted because many people ‘slept’ within these 7 days and I’m not one of them. It’s not because of any good thing I did; it is His grace upon me and for that I am grateful. And I pray that while I still have life in me, I will do all I can to bring Him glory and be a benefit to mankind.

2.ย  I am thankful for the gift of giving; for it more blessed to give than to receive. If you are able to give, it is because are privileged to have something to give in the first place. You are therefore doing yourself a bigger favour in giving that the one being given. Get it?

Recently, my brother was filling up the generator with petrol using a funnel and I said to him, “I always want to be the funnel. I always want to be the conduit. Because the generator will always be filled with fuel; but blessed is the funnel that is used to fill the generator. It can never lack petrol”. Enough said.


3.ย  I am thankful that I even have so much to be thankful for. I would never have thought it possible to write 21 things for which I am grateful. And that’s the point of this exercise; to dig deep and appreciate all that has ever been to (or taken) from you.

My devotional today was on gratitude (perfect timing, right?) and it recounted the story of the 1 leper, out of 10, that went back to thank Jesus after being healed by Him. Were they excited? Yes. But wouldn’t it have been better if they realized how great a blessing they had received and had given thanks?

Day 6 #7daysofgratitude



1.ย  I am thankful for my bed. You have no idea how much I look forward to jumping into bed after a hard day’s work. It just wraps it arms around me and rocks me to sleep. Yeah, I like sleep. A lot. Now if only I could write that as a hobby on my CV…..

2.ย  I am thankful for my imperfections. They help me strive to better always and remind me of the One who’s perfect and who can make me whole.

3.ย  I am thankful for jokes, comedy, witty remarks and comebacks. They make me laugh so hard and remind me that there is hope. There’s always a silver lining somewhere in the cloud called life.

Day 5 #7daysofgratitude


1.ย  I am thankful for colors. Being able to express ourselves, our moods, our preferences, our feelings in colors is a true gift. Even our Father expressed Himself in colors – look at green trees, blue skies, white (or brown or red or grey) sand, flowers and birds and people of different colors. All different but yet the same.

2.ย  I am thankful for challenges because they help shape me, make me uncomfortable and make me better. Like gold through the fire, I come out refined, better, more useful and more valuable than I was before. May your road be rough, remember?

3.ย  I am thankful for food (obviously…lol). The wonderful relationship between sweet caramel and salty peanuts; the taste of melted cheese as you take that bite of pizza; soft brown amala in a brief love affair with ewedu and gbegiri with shaki and kpomo obstructing your fluid hand movements; olives, wine and garlic celebrating the beautiful pink shrimps in Italian Puttanesca, Pringles and soft cheese washed down my throat with cold white wine. Different cultures uniting in the color, taste, aroma and origin of great food.

I realize I really like food (lol) and I’m sure you do too. As I always say, if we’re going to eat everyday of our lives, we can at least try and make each meal an interesting experience ๐Ÿ™‚

Day 4 #7daysofgratitude

1. I am thankful for the opportunity to reflect on the many blessings, opportunities and people in my life. Its easy to get lost in the whirlwind of activities and take for granted, the things we have going for us. This exercise/challenge has been a blessing to me and I hope it helps you realize the blessings you have as well.

2. I am thankful for today, for the days before and for the days ahead of me. Each day brings to me, an opportunity to be better, to touch lives and to bring glory to my Saviour with each of the 24 hours given to me.

3. I am thankful for the gift of books and reading. Through them I have been able to explore new lands and go on magical adventures. I’ve traveled in time and feasted with King Arthur and his men, I’ve played George with rest of the Famous Five gang, I’ve peeked through the windows in fright when Carrie got angry and set fire to the gym on prom night, I’ve screamed in horror as bullets riddled the bodies of soldiers during several wars, I attended the happy unbirthday with Alice and had tea with the party. I’m sure you get my point…lol.

I’m not there yet but I’m learning everyday and it’s really amazing.
